Like the title says, so here we go:
Jeff and Matt Hardy did the motion capture work for ‘WWF Attitude’. They were originally supposed to be in the game too, but the WWE told Acclaim not to include them because they felt that the tag team were still relatively unknown to fans. While they were paid for their work, they missed out on an appearance fee and royalties. It is little consolation, but their names appear in the game credits and a special thank you message was printed in the official strategy guide. (credit to Keson)
Goldberg was almost included in ‘Showdown: The Legends of Wrestling’. The deal fell through, although face textures for his model still appear on the PS2 iso. (credit to S.K. Styles)

Josh Asbill is not a wrestler, but appears as a playable character in ‘Backyard Wrestling:
Don’t Try This At Home’. He was included in the game after winning a competition.
The 1986 video game ‘Championship Wrestling’ was supposed to be based on the first WrestleMania, but a licence agreement was never met.
‘Cutie Suzuki No Ringside Angel’ was one of the very first video games to feature a female protagonist.
The first M.U.S.C.L.E. video game only featured one character that was available in the toy range.
All of the WWE SmackDown, SmackDown vs Raw and WWE ‘12/’13 video games by THQ were released in Japan as the single ‘Exciting Pro Wrestling’ series.
Undertaker provides the voice for his own character and Kane in WWF Attitude. The original plan was for Kane to have no voice at all because his character was mute at the time. However, developers felt it was odd that Kane’s character didn’t react vocally when attacked like the other characters did. So he was given Undertaker’s voice effects without the taunts.
Tecmo World Wrestling had an automatic grapple feature. When both players walked in close to the other, they would tie-up automatically. This eliminated the need of a specific grapple button. While this may sound terrible now, it allowed characters up to 20 unique standing grapple moves each. A true innovation considering that the game was released in 1983.
There was almost a Mario Bros. themed wrestling game. Super Mario Spikers was supposed to be similar to Super Mario Strikers, but based on volleyball. During production, they decided to make it a hybrid sport based on both volleyball and professional wrestling. The game got scrapped early on.
There is actually a series of wrestling based RPG’s. The first in the series was called ‘The Squared Circle’. They were based on ‘Choose your own adventure’ books, and were set in an alternate reality called “The Wrestleverse†were professional wrestling was a legitimate combat sport.
If you want an easy win in ‘The Simpsons Wrestling’, always use Ned Flanders. He has an unfair advantage over all other characters, including the boss characters. One of his basic attacks is a prayer which causes six bolts of lightning to strike your opponent. They can hit the opponent anywhere on screen, cause high damage and instantly stun opponents. Once they are stunned, the opponent will not be able to escape the remaining strikes in the series, thus keeping them stunned. If Ned uses this attack before making a pin attempt, the opponent will not be able to kick out, regardless of how much health they has left. Also, Ned has to be pinned twice in order to win a single round against him.
Haggar from the ‘Final Fight’ series appears as a playable character in the ‘Saturday Night Slam Masters’ series.
Both ‘Rumble Roses’ and its sequel ‘Rumble Roses XX’ have the exact same list of playable characters.
There is an indy wrestler called Starman. He is based on a character from the classic NES video game ‘Pro Wrestling’.
As a joke, ‘Mat Mania – The Pro Wrestling Network’ has a bunch of characters from other mediums appear in the crowd randomly. They include Superman, Batman, Robin, ZZ Top, Popeye, Alien, Stevie Wonder, John Travolta, Darth Vader, Princess Leia, a young Michael Jackson and the Stay Puft Marshmallow Man.
‘The Main Event’ was pulled from circulation because it was a WWE game made without the permission or knowledge of the WWE. While the characters had unique names, they were very clearly based on WWE wrestlers at the time. As a result, the game has become very rare.
‘Hulk Hogan’s Main Event’ is one of the worst selling wrestling games of all time. Endorsed by Hulk Hogan himself, the X-Box 360 game required the Kinect, but was not fully compatible with the device.
‘HammerLock Wrestling’ was released as a licenced game in Japan based on little known wrestling company ‘Wrestle and Romance’. It featured a number of genuine wrestlers, including Genichiro Tenryu. In other countries, it had to be released as a unique game loosely based on WWE and WCW.
Fire Pro Wrestling Returns features 327 playable characters, easily making it the largest playable roster in any wrestling video game.
Carmen Electra featured as playable character in the ‘Def Jam’ series and ‘Celebrity Deathmatch’. Electra has never worked a single wrestling match, and wouldn’t get involved with wrestling until 2005.
A story line in ‘WWE SmackDown vs Raw 2010’ ended with Randy Orton vs Cody Rhodes vs Ted DiBiase in a triple threat match at WrestleMania 25. The WWE would later hold the match for real at WrestleMania XXVI.
Fans heavily criticised THQ for spoiling a 2010 story line on its cover. Some versions of the game feature The Miz on the disc. That same year, The Miz would win the WWE Championship. THQ had no idea that The Miz was going to win the championship, or even receive a main-event push. The WWE suggested featuring him because they promised that The Miz would be available to do promotional work for the game.
Hugo/Andore from the ‘Street Fighter’ and ‘Final Fight’ series is based on Andre the Giant. In some games in the series, if Hugo is about to battle Allen, the pair will recreate the famous Andre and Hulk Hogan stare down from WrestleMania III.
King from the first two ‘Tekken’ games, Crasher Wake from Pokemon, Tizoc from ‘Fatal Fury’, Leon from ‘F-Zero’ and Greco from ‘Chrino Cross’ were all inspired by real life wrestler Fray Tormenta. Tormenta was a friar who founded an orphanage, and funded it with money earned through his sport.
For unknown reasons, a WWF logo appears in the game memory for the arcade version of ‘Mortal Kombat II’. One theory was that it was supposed to be an in-game advertisement for a WWE arcade game. Similarly, one of the ‘Game Audits’ screens records ‘Shawn Attacks’. Possibly a reference to Shawn Michaels, but nothing happens. (Credit to KWG)
For unknown reasons, there is a tutorial video for ‘Evil Zone’ on the ‘WWE SmackDown: Shut Your Mouth’. It is theorised that the video was only added to use up left over disc space.
